Happy Birthday Pardner


This Friday we will be celebrating this 'lil pardner's 68th birthday.Isn't this photo adorable? A photographer came around with a pony and my Nanny just had to get one done of my Dad. The outfit seemed to fit perfectly!

My Dad has always had an enormous sweet tooth. And, I've always been there to help fill it. The first thing he does when they stop by to visit is check the kitchen counter to see what kind of goodies are there.



Well, at his January check-up the Doctor told him that his sugar was high. So, I haven't baked anything with him in mind. Now granted January was right after Christmas and he went hog wild eating everything that was in sight. But, I'm not taking any chances.

Does anyone have a tried and true recipe for a great sugar-free chocolate and peanut butter dessert?
I always make him a chocolate cake with peanut butter icing for his birthday, but I'm sure if the flavors are the same he'll love it. I've found a few recipes on-line, but want something that someone recommends.

Why not take what you make on a regular basis and substitute the sugar with splenda.

Sorry I am of no help. My Dr. checks mine reg. as my Mother & Father both were type 2 diabetics.
Find out what the safest sugar substitute is and go from there.

Boy those must have been "the days", huh?! Back then everybody came around to your door, with milk, bread, potato chips, etc, etc... Too bad how you have to be afraid now.. There was one bad story about one of these deliver-to-your-door companies, around my way, and I won't order ANYTHING from them now!.. Anyways, Best Wishes, and a very Happy Birthday to your father!!

What a sweet picture of you Dad. He looks like a real cowboy. I wish I did have a recipe for you. Did you know you can find sugar free peanut butter cups at the store.. in the candy isle ..

Happy Birthday to your dad, what a darling picture that is of him as a little tyke:-) My mom's boyfriend Ross is diabetic so when she bakes for him she always substitutes the sugar with Splenda. If none of your friends have a recipe for you, just try one from online, they really do have some great ones for sugar free desserts. xoxo

Precious pic of your sweet dad! I've got one of me and my daddy together on his horse that I framed. It is wonderful that you are protecting your sweet dad from himself and his sweets cravings! Cherish every moment you have with him! I miss mine so very much!

You're a good daughter to be concerned. I echo what Tami says...use your own recipe and just substitute splenda. That and portion control is what it's all about. Hope he finds something good on the counter just for him.

I haven't made a sugar free chocolate cake (its not my favorite) but do make a lot of desserts with Splenda. Some of the very yummiest sugar free products are kroger brand. No kidding! LOL Their ice cream is really good and their brand pudding is so much better thatn jello brand.

I do have a super simple recipe for sugar free peanut butter cookies:

1 cup of peanut butter
2/3 cup of splenda (or 1 cup of sugar for any one who doesn't want the sugar free version)
1 egg

That's it. mix together. Put in a 375 over for about 12 minutes (it may vary).

Splenda doesn't brown like sugar so they won't have that darker brown look to them. But, they are delish and quick!
