Pig's Stomach or Hog Maw as some refer to it is actually a PA Dutch dish, My friend Bucky makes this dish for the holidays. She made these particular ones for Thanksgiving. I think that it's fun to learn about different cultures and their customs.
The cleaned and washed stomachs are filled with a stuffing made from smoked sausage, regular sausage, slightly boiled potatoes, sauteed onions and celery in butter and parsley. You can get stomachs from a butcher and it's basically a thin casing similar to a sausage casing with a thin layer of meat on it.
I've never tried it, but it sure does smell good when she brings the leftovers in for lunch. She doesn't eat the stomach herself (just the stuffing) but her Mum and brother eat all of it.
The stuffed stomachs are sewn up, browned and then baked in the oven until the skin is brown and crispy. Cooks actually has a few different versions of the recipe here

The pictures aren't popping up...I must say that from the words, I'm not "feeling" it. Ha! No, I've never heard of it, but I do love good sausage.

I have heard of Hog Maw. Since I have done plenty of surgery on dog and cat stomachs in my time, all I see is stomach when I look at it. So no, I could not eat it.
And I don't like sausage either. :(
I would possibly like it if I did not know what it was, but I have that whole mind over matter thing. It took me years to like sour cream. (Sorry I am late getting by this week). ~Diane
