It's been awhile since I've shared a recipe here and thought that you all might like to have this one. I got it year's ago from Southern Living , but have altered it a bit over the years. I made 2 double batches this past weekend. This recipe makes one batch.
2 medium tomatoes chopped
1ea red and green pepper chopped
1 bag of frozen corn (can use fresh if it's in season)
1/4 cup finely chopped red onion
1 jar of sliced jalapenos (drained and finely chopped)
1 (15oz) can black beans (rinsed and drained)
1/3 cup fresh lime juice
1/4 cup oil (I use canola)
1/3 cup chopped fresh cilantro
1/2 tsp ground cumin
1/2 tsp cayenne
Mix all - cover and chill for 8 hrs. Serve with scoops. You can omit the jalapenos and cut back the cayenne to 1/4 tsp if you don't like things hot and spicy. I probably add more than 1/2 tsp of cayenne- we like it hot. I love to eat this on a hamburger or chicken too. It's so fresh and good that you can make a meal of this all by itself.
